Cookery - delicious French recipes

History and tradition, flavor and texture - a celebration of France and its passion for food. A course that supports the imagination transporting you to Nice, Southern France where we highlight its signature dish ratatouille. Continue your journey looking at the many versions of coq au vin, a historic recipe that has been adjusted region to region throughout France becoming one of its most popular dishes. You will learn the secret behind all French cooking, take part in sharing and tasting, explore a variety of recipes, sometimes work as a group and make a French dish to eat and take home every week.

What prior knowledge, experience and qualifications will I need?
No prior knowledge or experience is necessary to enrol on this course. Please be advised that some learners who enrol will have more experience than others. A basic level of English, Maths and computer skills would be useful.

Learning Goals:
To develop your skills in preparing and producing a variety of French recipes. To experience the rich taste and texture of your selected menu. To learn the history and traditions behind the food. To identify and achieve a personal goal, as discussed with your tutor.

What teaching methods will the tutor use?
The tutor will use a range of teaching methods during the course which will include the following: Demonstration - both group and individual, one to one tuition, group work, assessment of progress, observation, discussion/question and answer sessions.

What assessment methods will the tutor use?
The course tutor will use a range of methods to assess progress on the course. These may include observation, completion of an Individual Learning Plan (eILP) which will be updated regularly, evaluation of work samples, question and answer sessions, photographs of projects to record achievement presented on our virtual learning environment (VLE).

Will extra work be required outside the class times?
Learners may wish to work on projects outside the classroom in order to progress. Homework exercises are set to enhance and develop techniques learnt during the session. You will be encouraged to access our virtual learning environment all.lewisham.gov.uk (VLE), take part in course forums and various online activities provided by the tutor.

What materials will I need for the course and how much will they cost?
Learners will be expected to purchase the ingredients before each lesson, this will be discussed in week one. The recipes agreed will then be available on the course virtual learning environment page for everyone to see.

What do I need to bring to the first class?
The tutor will provide the ingredients for the first session. Please bring a container, cling film, apron or overall, a notepad and pen, tea towel and dish cloth.

Options when finished
The department offers a wide variety of Design, Media, Music and Food courses at different levels. Information about these courses is available through the tutor, the Curriculum Leader or the ALL programme.

Additional information
The tutor will contact you via email before the course begins please ensure we have your correct details. This learning space is used for a varied course offer, please leave the space clean and tidy, ensuring rubbish and personal belongings are removed. All drinks taken into this space must be kept in a re-usable lidded cup or drink bottle.
